
It’s been a while since I last posted, hasn’t it? I thought I’d write a quick post with an update on a few things that I’ve been busy with.
My internship
I have spent the last month or so adjusting to my new internship. I’m grateful to have a job and the people I work with are cool, but it’s definitely been an adjustment. This is my first position in the tech field, so I do feel like I’m unqualified most of the time (silly imposter’s syndrome). Overall I think I am getting used to everything, and I will say I am learning a LOT.
There’s also a bit of a learning curve training remotely instead of in-person…it made me feel a little isolated at first, but with all the online communication (Zoom, Slack, etc.), the list of people I can reach out to with questions has only expanded since I’ve started working there. I think I have been doing well on my assignments, so hopefully things will keep looking up!
Cooking
I’ve been experimenting with a few new recipes lately, and I’ve loved them all! I found some Sweet Chili sauce from Wegman’s, and it tastes amazing on cauliflower! I normally cook buffalo cauliflower ‘wings’, but I’m glad I can switch it up with that Sweet Chili Sauce from now on.

Since Taco Bell removed their Spicy Potato Soft Tacos from their restaurants, I decided to make my own. I honestly like mine better (plus it’s probably healthier as I bake my potatoes instead of frying them and use veggies instead of cheese), so I suppose I’ll have to thank Taco Bell for removing them (just kidding, I’m still salty since they also removed my 7 Layer Burrito and Spicy Tostada).

Fall wanderlust
Autumn is my favorite time to travel-the weather is perfect and you’re bound to drive past some changing leaves. I think this whole pandemic thing is finally hitting me a little because I really miss being able to go out-even if it’s just to a local mall (which I suppose I could still go to, but the vibe is just off right now)-and feeling the autumn air in my face surrounded by people bustling about on their own paths. I’m just going to tell myself to keep on working and looking up; I guess this is my time to “save up” for whenever life becomes somewhat normal again.

I’m glad your internship is going well – it makes a huge difference when you feel like you have someone you can reach out to!
Also, the tacos and cauliflower look so so good. Sweet Chili Sauce sounds amazing!

And yes they were! I don’t really use a lot of different sauces so I’m really glad I found the Sweet Chili sauce!

That sauce looks so DELICIOUS. omg. I want some. And those tacos, too! It’s funny, I haven’t had the soft potato tacos, or Taco Bell, for that manner, in a very, very, long time. Possibly a year or more :’) And recently, I’ve actually been craving it, and then I hear that the soft potatoes have been STRICKEN from the menu, alas!!

It was very delicious, I hope you can find some somewhere haha. Ah that’s such bad timing that you’ve suddenly had a craving for the spicy potato taco after it was gone. Taco Bell was normally my go-to option when my parents want to go out for fast food but now I’m more meh about it
